Sharing is Caring: Bistro Staff Weigh in On New Fish and Seafood Menu!

The New Bistro Menu

Last week, 25 of our eager, fresh-faced and hungry staff sat down to experience our new bistro menu. The updated focus is on what we do best: seafood and fish. Bridges is all about seasonal, locally sourced, fresh-from-the-sea fare, so what better way to kick off summer on our gorgeous patio than with our brand new culinary creations!



Chef Ross Explains

Bistro Chef, Ross Collier, was on hand to guide our staff through the tasting. He emerged from the kitchen to rousing applause, a clear indication that our staff not only loved his menu but appreciate his dedication to his craft. Collier started off the tasting evening explaining that the new format for the bistro is an emphasis on sharing and, of course, fresh seafood and fish.



The Delicious Devil in the Details

Attention to flavour-detail is key. When asked what Pomace oil was, for example, Collier explained, “it’s a derivative of olive oil–higher end and better quality…It adds more flavour to our dressings.” It’s this kind of attention to detail that has taken the bistro menu to new heights of culinary greatness. But don’t take our word for it; come down and try it for yourself!

There was copious laughter and camaraderie at the long sharing tables, as the staff ate their way through the new menu. It was a tough job, but someone had to do it! However, don’t let the jocularity fool you–these servers were making copious notes, discussing flavours and posing insightful questions to Chef Ross. Their comments and reactions showed that they were genuinely excited about the food and the new menu.


It’s important to us that our staff are well-versed on the menu so they can help you order with confidence, knowing that you are in capable hands. In short, our servers and kitchen staff are menu experts–passionate about the food they’re sharing with you.

Bistro Tasting


The staff was vocal about their favourite dishes! A crowd favourite was the Rare Seared Albacore Tuna, which is seared rare and served cold.


Our server, Stephanie, commented:

“You can never go wrong with seared albacore tuna–simple delicious, and nicely seasoned on the outside.” This was echoed by another server within earshot who exclaimed “it’s just so fresh and seasonal. I just want to eat more!”


The Albacore Tuna dish is crusted with japanese pepper and sesame seeds, marinated in soya sauce, sesame seeds, black peppercorns, tosa zakuri, mirin, tomato paste, ketchup, pickled ginger, vegetable oil, garlic, salt and pepper, tabasco, and garnished with pickled ginger, banana leaf, and a lemon wedge. A perfect summer patio dish!


Other staff favourites included the Bridges’ Beef Burger. As one server put it, “this bad boy is juicy!”





The Hot Seafood Caesar garnered a lot of likes as well. A gorgeous mix of prawns, halibut, salmon sauteed in canola oil, butter, garlic, shallots, white wine and salt and pepper, served on Romaine lettuce and topped with Parmesan cheese, it’s no wonder they loved it!


Other honourable mentions were the Sizzling Shrimp, the smoked salmon on flatbread (a perennial staff fav), crab cakes, and the grilled swordfish garnished with papaya salsa.


With all the mouth-watering dishes, narrowing it down to just a few was no easy task!
